Time to put on a pot of chili!

It’s comfort food for the cold weather that’s not only good, it’s actually good for you.

Three Bean Vegetable Chili

Shopping List –

  • Sour cream
  • Shredded cheddar cheese
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 can tomatoes, diced
  • 1 can tomato sauce
  • 1 yellow or white onion, diced
  • 1 yellow squash, diced
  • 1 zucchini, diced
  • 2 cups vegetable stock
  • 2 tsp. minced garlic
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • Salt and pepper to taste


Cooking instructions –

Add all ingredients, except sour cream and cheese, to a pot and bring to a boil. Simmer 30 minutes. Serve topped with sour cream and cheese if desired.
