Getting kids ready for STEM-related jobs

Research shows students across the United States are falling far behind other countries when it comes to STEM fields. And with summer just around the corner some parents may be looking for something to occupy their kids on break from school. Now, there’s a new effort to teach children the skills they need to compete globally in STEM-related jobs. Nathalie Le Du explained.

Cooking with Chef Ragan

Cook-outs and barbecues are a popular past time during the summer months, but what do you do if you don’t have time to prepare? Chef Ragan joined us with an alternative  to grilling that you can also make ahead of time!
Seafood Paella Ingredients:
2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 2 teaspoons dried oregano
Kosher salt and black pepper to taste
2 boneless chicken breasts, cut into 2 inch pieces
  • 2 tablespoons olive oil
3 minced cloves garlic
1 tablespoon crushed red pepper flakes
  • 2 cups uncooked long grain white rice
  • 1 pinch saffron threads
  • 1 bay leaf
  • 1/2 cup of parsley, chopped
  • 2 cups of chicken stock
  • 2 tablespoons of lemon zest
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 lb. shrimp, peeled and deveined
  • 1lb. Mussels (cleaned)
Directions: In a medium bowl, mix together 2 tablespoons olive oil, Cajun Seasoning, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate. Heat olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 2-3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes. In another skillet heat 2 tablespoons of olive oil over medium heat. Stir in marinated chicken, onion and bell peppers; cook 10 minutes. Stir in mussels until they open, add shrimp and ; cook, turning the shrimp, until both sides are pink. Spread meat and seafood mixture over rice and serve hot.
