MEMPHIS, Tenn. — Kroger stores are celebrating the foods of Mexico this month.
From cilantro to guacamole and pork to beef, the flavors of our southern neighbor are coming to your local Kroger store.
Stores will have live demonstrations to show you how to make some of your favorite dishes and to discover new favorites.

Kroger Chef Darryl Harper joined us to make some tasty Chipotle Chicken Tostados.

1lb. roasted chicken (pulled)
1 cup sweet red peppers (chopped)
½ cup chili sauce
1tsp. taco seasoning
¼ tsp. salt
¼ tsp. pepper
½ cup sour cream
1tsp. chipotle sauce
6 tostado shells
3 cups shredded lettuce
1 ½ cups guacamole
1 ½ cups Fuego cheese (shredded)
In a large skillet, cook red peppers over medium heat until tender. Add shredded chicken. Stir in the chili sauce, seasoning, salt and pepper. Heat through. In a small bowl, combine sour cream and chipotle sauce. Layer each tostado with lettuce, meat mixture, guacamole, chipotle, cheddar and sour cream. Serve.
