Dandelion Spread as prepared by Chef Elle

2 c dandelion greens
¼ c chives
¼ c parsley
1 shallot finely chopped
1/2 garlic bulb, roasted
2 T oil from roasted garlic
4 oz. goat cheese (room temperature)
sea salt
cracked black pepper

fresh baked bread
tomato slices

food processor, serrated knife, measuring cups, measuring spoons, spoon

T = tablespoon; t = teaspoon; c = cup

In a food processor, add dandelion greens, chives, parsley, chopped shallot, roasted garlic and oil and blend until finely chopped. Add goat cheese and blend until mixture is smooth. Transfer spread to a storage container and refrigerate for at least 2 hours or until ready to serve.

Season tomato slices with sea salt and pepper.

Smear 2 tablespoons onto two slices of bread; place two tomato slices on top and finish with the second slice. Using serrated knife, trim the crust and cut into three petite sandwiches. (*see video)
