Squash Bake with Pimento Cheese
Sausage Squash Dinner Bake With Tom’s Tiny Kitchen Pimento Cheese
Start to finish: 1 hour
1 pound bulk sausage
3/4 cup chopped onion
1/2 cup chopped green bell pepper
5-6 medium yellow squash, sliced, steamed and drained of excess moisture
3 cups Tom’s Tiny Kitchen Pimento Cheese (Classic or Chipotle)
2 1/2 cup dry stuffing mix (we use Pepperidge Farm Herb)
8 ounces plain Greek yogurt
1 cup French’s fried onion rings
Step 1: Heat oven to 350 F degrees.
Step 2: In a large skillet, brown sausage, onions and peppers. Drain off drippings.
Step 3: Stir in squash, pimento cheese, dry stuffing and yogurt. Mix well.
Step 4: Spread evenly in a 2-quart baking pan sprayed with non-stick spray. Bake 25 minutes.
Step 5: Remove from oven and top with French’s fried onion rings. Bake another five to 10 minutes, taking care that onion rings do not burn.
Step 6: Remove dish from oven when onion rings are crispy. Let stand for 10 minutes to cool. Serve immediately or can be refrigerated and reheated the next day.
