Fresh Summertime Salad

Ready In: 25 minutes

• 1 cup diced cucumber
• 1 cup diced fresh tomato
• 1/2 cup olive oil
• 1/2 cup red wine vinegar
• 1/4 cup diced red onion
• 1 teaspoon white pepper
• 1 teaspoon salt, or to taste
• Crumbled bacon (optional)

Toss cucumber, tomato, olive oil, red wine vinegar, red onion, and white pepper together in a large bowl; season with salt. Refrigerate until slightly chilled, 10 to 15 minutes top with crumpled bacon (this is optional).
