Chef Elle: Green’s Waffles

There's something special about the neighborhood diner.

What's not to love?

The atmosphere is warm.

Forget being in a place where they know your name. The waitresses even know what you're having! The conversation is great. And most importantly, the food is always delicious and served with a wink and a smile.

But sometimes lounging around the house just can't be beat.

And when this happens, start the top of your morning with this recipe. Chef Elle developed it for breakfast, but with a little imagination, it can easily teeter towards dessert. So give this recipe a try. It's doable, delicious and as always, Chef Elle kept it fresh, easy and organic.

Top of the Morning Waffles as prepared by Chef Elle


1 c all-purpose flour
3/4 c white rice flour
1 c milk
2 eggs
4 T melted butter
1 t baking powder
2 T sugar
1/2 t sea salt
Cinnamon Sugar
2 T brown sugar
1 T fresh cinnamon


waffle iron, measuring spoons, microplane, meauring cup, measuring spoons, non stick spray, Mason jar w/lid, mixing bowl, whisk, small skillet

Old School Translations

T = tablespoon; t = teaspoon; c = cup


Melt butter in skillet. Add melted butter, milk and eggs in Mason jar. Secure the lid and shake vigorously. Place dry ingredients in mixing bowl and whisk until ingredients are well incorporated. Add liquid mixture to dry ingredients and whisk, leaving some lumps. Set aside for fifteen minutes.

Using a microplane, grate cinnamon and mix with sugar.

Preheat waffle iron according to manufactuerer's instructions. Generously coat cavities with non stick spray. Pour the recommended acmount of batter into each waffle maker. Sprinkle cinnamon sugar and close lid. Cook until golden and enjoy (yields 4 servings). To accommodate a larger crowd, simply double or triple the ingredients.
